Mental Lentil ...

... well, "Lentil Bake" sounded so boring! This dish is very easy to make and you can put your own choice of flavourings in it. I tipped in some Mauritian curry powder as well as the stock cube last night, hence the recipe title!

It’s a dish from way back before the metric system was introduced so apologies for the ingredients being in ounces.

3oz washed red lentils
1oz fresh breadcrumbs
2oz strong cheddar cheese, grated
1 beaten egg
1 large onion finely chopped
1 or 2 cloves garlic, chopped or crushed
1 stock cube and/or marmite/flavouring of your choice
1tsp mixed herbs
1 tbs Olive Oyl (Leave Popeye to one side)

Saute onion and garlic in the oil.

When soft, add lentils with just enough water to cover.

Add stock cube and boil for about 10 mins or until lentils are soft. Add more water if necessary but try not to get the final mix too sloppy.

Add breadcrumbs and grated cheese to the pan, then stir in beaten egg and herbs/flavouring.

Place in greased dish and cook on medium heat for about threequarters of an hour, depending on thickness of the mixture in whatever dish you used. Use a bit of common sense - it’s done when it’s all gone fairly solid.

Serve slices hot or cold - freezes well.

For a meat version add some (pre cooked mince ) , or use an OXO cube
