Well you need extra calories to heal your finger.
Do you need me to pop round and cook tea for you tonight, or can you manage?
I remember how hard it was to chase things round the chopping board when I broke my arm. Terribly frustrating.

I think that's the kindest thing you've ever said to me Maz! Managing OK as long as I don't knock it. Plenty of grub cooked. I had ham and veggies plus a slice of apple pie with cream twice.

Our "new" 40 year old mincer attachment for our Kenwood turned up yesterday, (almost as good as new). I gave all the bits a good washing and then used it to turn a generous pork chop into mince for a first go at some pork burgers. I shoved an onion and a decent clove of garlic and two slices of well toasted Chia bread through then added a sachet of southern fried pork and tomato cup a soup and a veggie OXO. The mixture seems to be just right for forming

I think I have found a good way of forming the burgers, we have a hand operated potato ricer which is just the right diameter for burgers, I can use it without the shredding rings if I stand it in a small non stick flan case which conveniently is just the right size as a base. This should produce a nicely formed flat burger, I'll see how I get on.

My burgers were excellent although I will have to think again on formation. They survived in the pan but only just, not compressed enough. I had more pork mix than I could eat so I put the remainder in a small tin, shoved it in the oven and made a meatloaf for tea tonight.

No but a consideration for next time, they kept their shape fairly well, an egg should help. The meatloaf is solid as I could compress it really well in the tin. The cup soup mix I put in worked very well as a flavour enhancer, I didn't like them as a soup so a bonus there, all good fun. :smile:

You may also find fresh bread binds better than toasted bread ( I use flour instead), and I use an egg. I make mine from Beef, and add a slurp of HP Sauce to the mix, and form them by hand. I've never had a bother with them holding their shape.
When I make Salmon Cakes, I stick them in the freezer for about an hour before I cook them. That way they hold their shape until a crust has formed on the outside during frying, and they can't fall apart or go mushy.

Good tip on the burgers Maz.
I had ham and veggies twice and the last of the apple pie and cream for pudding at teatime...

The last of the ham and veggies for dinner. Tea was a bit strange, I had a small bag of chocolate covered peanuts and half a bowl of muesli.... Didn't really fancy anything......

I know. And I do envy that you can eat more substantial food.
And what I hate most of all is that we don't lose any weight eating lighter meals. It doesn't make sense, does it?
We have some nights when something as heavy as a toasted sandwich is just too much...
( last night was a Prawn Sandwich and tonight wasn't much more) Just not hungry.

My cooking yesterday finished with a slow cooker full of a beef, kidney and onion stew with veggies and a large cast iron pan on the hob with more veggies in in reserve. Dinner was a Scotch Egg with some gravy from the stew and topped up with veggies. Tea was the same but a small pork pie with the same treatment. Nothing needed for afters!

Beef and kidney with onions and veggies for dinner and tea. I say beef because Kathy cut up shin instead of steak for me..... I think it's perhaps tastier than the steak..... 'Merry' Boursin on water biscuits for afters.....

Ham and Cheese Croissants tonight.

Tomorrow night is an early Christmas Dinner with my son, his girlfriend and his dog ( he has to work Christmas).
Pate' and Cheeses and Crackers with drinkis, on the deck, sometime late afternoon
Today I stuffed 2 large Chicken Breasts with Sage and Onion Stuffing, then wrapped the in Proscuitto and oven roasted them. They will be sliced and served cold, with Prawns and Salads.
All the trimmings were cooked up with Rice/Carrots/Peas for the dogs Christmas Dinner, to go on top of her dry dog biscuits. (Waste not/want not and the dog loves it...makes her feel special)
I've made a boozy, creamy, chocolate dessert for anyone left standing later in the evening.
An Aussie Christmas, and not a sprout in sight. All food served cold.
I made Irish Cream Fudge a few days ago, and up until last night I had successfully hidden it at the back of the fridge from Febby. I caught him hanging around in the pantry ( guilty look said it all) and he asked me if I had eaten it all. He claims he had checked all my usual hiding places! ( I allowed him ONE piece)

Then the "kids" will want Eggs and Bacon for breakfast on Sunday morning and a walk along the beach before they head home. I don't know where they put it all. We can't eat like they do...

I had a Scotch egg and two boiled eggs as finger food with HP sauce for dinner. I had pizza for tea and an apple for pudding.

Scotch egg and mashed spuds for dinner. Pie and mash with peas for tea with an apple for pudding. I have all my veggies lined up ready for this morning's cook in!

Meat pie and veggies for dinner and straight fat-free veggies for tea, the mutton has not yet joined the party in the slow cooker but is gathering strength on the hob in a CI pot after de-boning and de-fatting. Cold weather grub Maz!
