Chicken and veggies as usual. They are at their peak at this time of the week. I never cease to marvel at how well prepared cooked food improves as it matures in the fridge. This is particularly true of any combination of Tomatoes, Onions and Olive Oil!

We've missed a couple of posts but here's today's offering. After doing all my veggie cooking I roasted the chicken and thought you'd like to see what my 'four hour chicken' looks like. It's well spiced and tastes as good as it looks.
(You can also be quite sure that no salmonella bug could survive that treatment. :biggrin2:

I have cooked a whole chicken for that length of time, it had 4 bulbs of garlic in with it too and was delicious.

This has a full root of garlic in as well as some Asian spices from Chaudrey's. The gravy with the roasted peppers and tomatoes turbocharges the veggies. I had scotch egg and veggies for breakfast and lunch, then burger, egg and veggies for tea. I am feeling no pain..... :biggrin2:

A walk to the Four Elephants to take advantage of their 25% off food. Had the tandoori mixed grill with a saag paneer as a side. The only down side was the rain on the walk home, it's only 5 minutes away but my legs got very wet.
