I'm getting last week's batch into a corner. We are getting close to a bout of veggie shopping and cooking. Amazing how fast it comes round!

Three hot meals as usual but I allowed myself a small treat mid morning. Mackerel fillets in spicy tomato sauce on oat cake crackers. Such a lovely and distinctive taste. (And stuffed with long chain Omega-3 oils....)

I think I'll roast my chicken this morning..... I fancy fish and chips but will take a view when I see how my last batch is holding out. Decisions, decisions....

I didn't have fish and chips yesterday, I just had chips! I cooked chips and they were so good I ate them on their own for dinner, Sometimes the simplest things are the best! I couldn't finish my tea, I was too full! I shall eat what I left for breakfast this morning......

I had two starters at the Waggoners for my dinner, A sea food plate and the barbecued ribs, both beautiful.... I had tea at Short Clough, Fried Fish and mushy peas.

Same as yesterday, oatcakes and mackerel for dinner and meat and veggies for tea....
I visited a friend yesterday and came away with a couple of beetroot and some courgettes.... I shall do something with them today while they are fresh!

I treated myself to Rib-eye and chips last evening. I'm a bit limited with space here at Ems so I thought I'd try fried onions in the oven with the oven chips. Success! I sliced the onion(s) and put them in a lined tray, added a liberal amount of oil and into a preheated oven at 180°C - 30 minutes later - perfection! I shan't be frying onions again any time soon.
Measure with a micrometer, mark with a pencil, cut with an axe.

I cook them like that sometimes Julie, It works well if you're cooking Tomatoes at the same time, almost feels like a free ride.

When I visited my friends at Kayfield on Monday they gave me some beetroot and courgettes. I cooked them yesterday.
Courgettes are outside my normal range of veggies so I had to get inventive.... I sliced two small onions, then sliced the courgettes into the slow cooker and added olive oil, spices and unfiltered cyder apple vinegar. As an afterthought I mixed in a tin of Sardines in tomato sauce and sprinkled Herb de Provence over it and cooked the whole shebang for a couple of hours. It worked well, tastes good and I am looking forward to it being a nice addition to my current veggies....
