I made individual Chicken and Baby Spinach Pies.
Very nice indeed, but couldn't finish mine because it was very filling.
Made the pastry too...I get the domestic goddess badge today.

Ah.... salads! Not salad weather here.... I had the last of the stew for dinner, a very small helping. Fir tea I had a treat, 3 small oven bottoms with vintage cheddar and beetroot. Even I'll admit that after two days broccoli and cabbage soup begins to lose its allure! Never mind, I hopped onto the scales this morning for one of my rare weight checks (I rely usually on the waistband of my trousers) and got a pleasant surprise, I was only 3lbs over 12 stone fully clothed and in my slippers. I reckon that means I am at least maintaining, and probably below my old fighting weight of 12 stone. Time for a foray into 11 stone plus territory I reckon! My personal nightmare is going into the surgery in 12 months and being told I am increasing my blood sugar again! I want to stay pre-diabetic......

A sort of fish pie concoction made with cod, leeks and mushrooms in a white sauce topped with mashed swede & grated cheese, served with steamed broccoli & green beans. Sounds a bit weird but delicious! Pudding was a spoonful of full fat Greek yoghurt (yummy) with blueberries and a sprinkle of toasted nuts & seeds.
A lot more time being spent in the kitchen....I have even been seen in a pinny! It's the washing up that kills me. :sad:

Burgers, onions, beans & chips tonight - junk but tasty!

I made a cottage pie with cauliflower instead of mashed potatoes. It was very nice.

Moh, nobody eats less junk than you and Fred! Wendy, take a tip off Mary Lancaster at Crickle many years ago. Breakfast porridge was served in a bowl and the same bowl used for the morning pint of tea. Fried egg and bacon served on a thick slice of bread. Kitchen table scrubbed once a week so no tablecloth. Only washing up was a bowl and a spoon.....
One small oven bottom with a fried egg on it for dinner, the last two oven bottoms with egg and bacon on for tea. During the day I cooked mutton chops on a bed of onions, harvested the fat by dinnertime and de-boned and de-fatted the chops. Pan filled up with carrots and parsnips and put back on a slow stove. By 22:00 last night it was a splendid veggie stew so no cooking today! I have a swede in reserve, will cook that separately and add as the level goes down. Mashed with butter it will make a good thickener!

We were out at the hospital most of the afternoon (planned) so we had already decided to visit the new 23 The Grill on Church Street. I had grilled peri peri chicken burger in a brown seeded granary bun with Halloumi cheese, mixed chopped green salad and grilled sweet potato wedges, it was very nice. They have a lot of healthy options on their menu and a good vegetarian selection.

I boiled and mashed the swede yesterday but no butter. Popped it in the stew and stirred it in and so no co0oking problems yesterday. Mutton stew with lots of veggies for dinner and tea. Only small bowls so I treated myself to two small currant teacakes with cheese at teatime.....

Black peppered Basa fish with saute potatoes, broccoli and carrots last night, tonight is lamb chops on a bed of mixed chick peas and lentils with mashed potatoes.

I made a chicken tomato & pasta bake last night made with Fiorelli pasta, had 3/4 of it and the remainder for my dinner today.

I have meat balls in a thick beef and tomato sauce making in the slow cooker. I shall a have it with some nice Tagliatelle pasta, I prefer the ribbon type pastas to the normal round spaghetti, a bit of cheese to top it off.

Col is bringing a Chinese takeaway back tonight but without rice, my job is to produce some cauliflower riceto go with it.
Believe it or not after three weeks of settling in to a low-carb diet he no longer needs to take any drugs to control his blood sugars. He was failing to do that on a maximum dose of Gliclazide plus Metformin.....and he was only having small portions of rice, pasta or potatoes. Amazing that all he needed to do was cut them out of his diet completely.

Son and his girlfriend coming to stay, so I've stuffed Chicken Breasts with Baby Spinach/Mustard/Cheese mix, then wrapped them individually in buttered Fillo Pastry. They are ready to go in the oven later. Will do roast spuds, steamed veg and my white herb sauce to serve with it. Missy doesn't like Pepper, which is a bit sad, as the rest of us love a good grind of Black Pepper in the herb sauce...but we can add it at the table later.
Writing this has just made me realise I haven't prepped my apples for the crumble. Darn! I was feeling so organised!

Wendy, that IS wonderful news. I hope it continues.
I have a friend with constantly high blood sugar readings and she is always amazed how her blood sugars return to normal after a week at my home. I think I've been maintaining hubby in the pre-diabetic stage for so long ( over 12 years) that I cook a certain way. Plus, she has always had a sweet tooth...her downfall I think.

That's wonderful Wendy, directly comparable to my reversion to pre-diabetic. I am so pleased for him.... It just goes to show how complicated diet is and how you have to experiment. I'm beginning to think that my love of home made bread and spuds is part of my Achilles Heel.
I had two small currant teacakes with haslet and coleslaw for dinner and two more with just coleslaw for tea plus a bowl of veggies. I shall cut the bread down even further..... By the way, I was on 4 Metformin a day but have cut that back to three and am better for it.

Hubby was a bit too fond of bread. We haven't eaten bread for well over a year now, except when we occasionally share a subway salad roll, which is a treat.
And potatoes are so horrendously expensive here that even they are a treat. I make a small potato salad and mix it through a garden salad, so it's just a taste here and there. Rarely eat chips, and when we do we only buy a small cone and share them.
Quite often I take him a peeled carrot and a glass of mineral water as an afternoon snack ( he loves that). And he has got used to a Cup of Soup and a slice of cheese for lunch.
He's the only person I know who has just one weetbix for breakfast with only a splash of milk.

Still loves his Red Wine, but limits it. His readings are fine so I see no need to cut that from him ( but I will if it needs to be done!)

The cauliflower rice was very tasty. I decided to fry it gently for a few minutes in coconut oil with a few cumim seeds, it was still a bit crunchy and went well with my king prawns with ginger & spring onion.

It sounds strange, doesn't it ? ( anyone would think I keep him in leg irons in the cellar :laugh5: )... But he is actually attached to the computer most of the day due to his work. That's why I say I drag him out for a walk too. I have to physically wrench him from it some days.
He loves his cold peeled carrot straight from the fridge, washed down with mineral water.
In a way, it's good he can't cook. He just eats what I give him most days...

I cooked some sausages on a bed of onions to augment the waning stew. I had two small sausage butties for dinner and a bowl of stew for tea, very small. Had a small butty with one sausage in to make up the weight. Usual intake of apples at dinner and tea. An apple a day keeps the doctor away....

What we didn't have for tea was the leftovers from the Barlick in Bloom cafe I cooked for yesterday; there weren't any! First time we've sold out of everything.

The cafe netted £136 after donating £25 to the Rainhall Centre.

(Our tea was a delicious Thai takeaway; I couldn't face any more cooking yesterday!)

His Lordship has requested Fish for tea (he was rattling those leg irons so loudly that I shall grant the request).
Not sure if I will go the hot veg or Salad route yet...
