That looks like 'Masterchef' quality. I've done something similar in the past, and used a mandolin to get the thin slices - Just onion and cucumber is worth doing. You can save the bother by buying the jars of Polish pickled veg.

Small bowl of frozen stew for dinner. Fried smoked haddock and an egg on a big butty for tea. Eccles cake and a small apple pie for afters.....

I moved the last few diet related posts into the
Losing Weight thread.
I had sun dried tomato and mozzarella pork sausage and bean stew last night. I froze two portions from the batch I made.
Our Jack is coming round to talk about what we are going to do with his kitchen so will need feeding. Tonight it will be a chicken and tomato dish and pasta I reckon. I'm loving dishes with tagliatelle balls at the moment, I find the ribbon pasta a lot nicer than the normal thin spaghetti.

Yes, Tagliatelle is lovely... ( you need tea towels tucked into the neck of your top though)
Well, we do! We are mess pots.
Chicken Breast wrapped in Bacon tonight. A rare treat. I enjoyed it, hubby didn't. He had the bigger portion as it was one breast divided between two before I wrapped them in Bacon. Wish I had served myself the bigger portion now. Did them in the oven with a light spray of Olive Oil.
Though it doesn't look like we will be having them again, by his comments....

The problem is, the only part of a Chicken he will eat is the breast ( whereas I think legs and thighs can be very tasty). The only way he will eat Chicken Breast is if I slice it paper thin and crumb it. So the problem with dinner tonight wasn't the taste...it was that he actually had to cut through Chicken that wasn't paper thin!

I would make him cook his own tea Maz!
When I cook a full bird, the whole lot gets consumed, carcass stripped and then bubbled up to make stock which I freeze in batches to add to other dishes
My recipe is quite simple for combining with pasta, dice the chicken breast(s), fry up to seal along with a sliced onion, 1 tin of chopped tomatoes, 1 each of veg and chicken stock cubes (if out of stock in the freezer) and some chilli flakes. Simmer for 10 minutes while the pasta cooks. Can be used as a topping to strip type pasta or mixed with twists, shells or butterfly's and chucked back in the oven to bake. A bit of cheese on either dish if you like.

Nice fried fish from Chubby's on the Square with mushy peas for dinner. Three small favourite butties for tea, Mature Stilton and tomatoes.

I'm just doing a catch up here. Maz the pickled veg look great, so does the salmon.
Ian I agree, we eat all the chicken too.
Tonight I'm trying a recipe that popped up on Facebook. It's a swedish meatball recipe with a cooking method I've never seen before. I'm not sure how well I'll like cooking meatballs in milk. I will report back once we've tried it.
The other night I made another Facebook recipe for slow cooked Mongolian beef. It was really rich but definitely on the list for a repeat.

Mondays & Thursdays are still low calorie days for me, so just a plain 2 egg omelette last night, very simple but filling and tasty. Pud was a small clementine.

Three oven bottoms with pressed beef on for dinner. Boiled carrots and parsnips and had a steak pudding on top of a small bowl full for tea....

I mashed the carrots and parsnips after heating them slowly on the stove, they had lots of butter in them! Had meat pie and mashed carrots and parsnips for dinner and tea. A third of a bowl left so that's the start of today's dinner...... Cheap simple food for a cheap sensible bloke!

I had the last of the veggies with a steak pudding for dinner. For tea I had roast ham, beetroot, sweet potato chips and a couple of poached eggs on top. Lovely! I cracked a bit later and had a tiny cheese butty to fill a corner.....

We were going to go to the May Day Rally at Townley Park today but decided against with it chucking it down most of the morning. Consequently we decided to have something easy to come home to so tea was planned from the freezer. Keelham farm came to the rescue.
I had lamb and pea keema with pilau rice and a spinach and chickpea pakora accompanied by half a garlic and coriander naan. Sally had the same but with chickpea dahl instead of the lamb.

I had two pieces of Barents Sea smoked haddock. I had one of them fried on two oven bottoms for dinner with horseradish and a fried egg on top. For tea I had the same but with the addition of thin slices of cheddar cheese with an Eccles Cake for afters.

I had a treat yesterday. Cheese and Onion pie and a custard from Liddels for dinner and two small boiled ham butties for tea followed by Pistachio nuts and Pontefract cakes eaten together. Don't knock it, try it, lovely combination!

I bought a 100g packet of pistachios last week. Healthy evening nibbles I thought. I then read the label, and it seems it contains 600 calories. Off the shopping list in the current climate.

Two small ham and beetroot butties and three scones for dinner. I treated myself to one of the Co-op best pizzas for tea, than one scone and stewed plums and cream for pudding. (Late sell-by date cream on good offer at the Co-op!)

I had a change yesterday, one of Kathy's Cornish Pasties with baked beans for dinner. Tea was the rest of the beans, a steak pudding and sweet potato chips. The last of the the stewed plums and cream for pudding.....

Steak pudding and a tin of baked beans for dinner. (God Bless the person who invented baked beans, one of the best tinned foods there is!) I got a small piece of braising steak off Kathy on Friday. I marinaded it all day in olive oil and Lea and Perrins with some apricot jam and salt and pepper and a sliced tomato and braised it on the stove in the front room later before finishing it off under the grill. It made three wonderful butties on oven bottoms. Very, very good.....

Creative bug gripped this morning, so I am defrosting some Fillo Pastry.
I've cooked up some Spinach, and when that has cooled I shall mix it with Ricotta Cheese, finely chopped onion and a tin of Wild Alaskan Red Salmon. Will do layers with the Fillo Pastry. And yes Liz, I am considering a shake of Piri Piri...
Might serve it with Cauliflower, Baby Peas and Mashed Spuds.
(Still a way out from dinner yet, but I am looking forward to it. The weather has taken a turn...wet and grey...though it is not cold. They do say it will be wild and woolly later though.)

Yesterday was a small sausage butty day for dinner and tea. Because the warmer weather has arrived I didn't fire the stove just left it burning slowly to burn off. I took the opportunity to put a big pan of mutton in cider on and it has cooked slowly all night. It's finishing off on the electric hob now. That leaves me with only a few mutton chops in the freezer and they can be dealt with by grilling. When they are done, a defrost and then I'll get Stuart to look for an old sheep for me!

Just thought I'd share this little gem. We had the whole tribe here for Mother's Day dinner on Sunday night. I'd slow cooked a shoulder of lamb and a blade of beef. We put everything on the table so that everyone could help themselves. When asked what she'd like on her plate my granddaughter said "some of that chicken and some of the other chicken". The other kids then joined in with "I'd like some of both chickens too".

Well my hubby denied any Red Salmon in his portion last night. He shovelled it down and declared it delicious, but afterward when I mentioned the Salmon, he denied any in his. ( he did indeed have Salmon, which only reinforces my claim that I could feed him dog food and he wouldn't know)
Had Veg Lasagne tonight, and it was delicious. I placed a slice of dry fried Halloumi Cheese on the side...first time we have tried Halloumi...and I can't say either of us were particularly taken with it. Quite disappointing. Can't understand the attraction.
How do others feel about Halloumi Cheese? Are we missing something? ( tastes like salty rubber)
