I love watching "Come Dine With Me" (English), and was struck by a dish someone cooked called "Rumbledethumps" - a Scottish Borders dish.
Had a bit of spare time today, so I made it this afternoon. We are having it with Crumbed Chicken ( not the usual roasted meats or pies), but I think it will go ok.
I found several recipes on line, and have gone with them...and added some crumbled crispy fried bacon as suggested in one recipe, though I suspect this is a deviation from the norm. Only one recipe I came across suggested adding flour to the potato/cabbage mix, but I didn't. (I thought it might go a bit stodgy?)
Does anyone have a favourite recipe for Rumbledethumps? (I can think of various ways to change it slightly, but I will wait until we have tried this first lot for dinner, and see how well it goes down with Febby).

It is Colcannon, but that wasn't what I was trying to remember...I just had a google and it was Stovies, but that is basically potato and onion with a bit of whatever else you have thrown in. I think the Scots have 1001 different ways of cooking potatoes and onion!

It was really ( really) YUM! ( possibly could have had a bit more onion...and I think a shake of Piri Piri would have raised it to a YUM+ level)

I've made Lasagne.( with Spinach Bechamel)
Stanley will think I am the only one eating whilst he is away. I wonder how he is going with his meals, being so used to his own methods and flavours. If he hasn't packed a few staples in his bag, he may be fading away. ( I always moan that pub meals never have enough veg or salad. As someone who can eat six or seven different veg on my plate at night, a spoonful of peas and a half a scabby carrot doesn't do it for me. Nor does a half a lettuce leaf and a slice of tomato.)
I suspect he may sustain himself on Ploughman's lunches....

Pork chops, apple & veg tonight, washed down with a bottle of champers to celebrate / commiserate the end of an
8 week holiday. We set off back to the cold and wet in the morning. A 3 day trip in itself.

We had corned beef hash made with celeriac instead of potato, freshly picked broad beans and a fried egg. Strawberries and raspberries with full fat yoghurt for pud.

Not pub meals Maz, we were fed in the university refectory and they provided a packed lunch each day as well. Very good full English to start the day, packed lunch was so-so but the evening meal was great, salad bar to start, a good choice of main dish, pudding and coffee. We were doing a lot of walking so I let rip. I have put two pounds on but I'll soon deal with that. No complaints at all about the catering!
I bought a ready made rice dish from the C-op and a pizza. I had the paella last night and it was good, I read the ingredients and it had all the right stuff in it. [And it was half price as it was nearing its sell-by date!]
Back to normal today.......

Home made spicy lamb burgers with broad beans, green beans, broccoli and a cucumber riata. Yummy.

Spurred on by the knowledge I have to address the slight increase in my weight due to lots of walking and three meals a day at Keele I have taken steps! Yesterday dinner was 7 small rough oatcakes with a slice of tomato and a healthy smear of Boursin soft cheese on each. Tea was a half bowl of mashed carrots and parsnips augmented by peas, a small fillet of hot smoked mackerel and two poached eggs totalling less than a small bowl full. Very nice and nothing but fruit for pudding.

My weakness is the occasional need for something sweet. To reduce this being an increase in calorie intake I had fruit pie with cream for dinner and nothing else. I had mashed carrots/parsnips and an onion and tomato sauce I made earlier with one small smoked mackerel fillet on top and the other half of the fruit pie and cream for pudding. Possibly a bit too much but I really enjoyed it!

Meatballs tonight and I have made a Tomato/Red Capsicum/Herb/Zucchini Sauce to smother them with. Just trying to decide if I will do Mash and Peas or Air-fried chips with them.

Go for the mash and peas Maz! Recently I have taken to not cooking frozen peas. I make the mash and put the peas on to defrost afterwards. When they are mixed in and reheated in the microwave they remain al dente and I like the crunch!

Mashed veggies for dinner and the same for tea with the last small mackerel fillet and two poached eggs. This finishes the original veggie cooking. The next batch is sat there waiting to go. I shall have a rest from veggies today...... Good for me but every now and then I fancy a change!

Six small rough oatmeal biscuits for dinner with Boorsin cheese and a slice of tomato, a peach for pudding. For tea I made a two egg omelette with pilchard filling and had that with a tin of baked beans.... I filled a corner later with a very small Burgen butty filled with crunchy peanut butter.... (I know! But I felt hungry!)

Oh dear Stanley, I hope you soon feel better.
Grilled salmon with cauliflower cheese, broad beans, broccoli and green beans. Home grown berries with yoghurt for afters.

Yum! ( apart from the Broad Beans)
Chicken Curry loaded with Red Capsicum, Zuchinni, Onion, Cherry Tomato and Cauliflower. Very enjoyable and slow cooked as I was catching up with inside jobs today.
