Steak pudding and peas for dinner. Meat pie and peas for tea. Meanwhile, I was slow cooking a bunch of Oxtail. I've just de-boned it and skimmed the fat off the gravy. It's all back in the pot now waiting for some veggies. The gravy set solid so I've added some water....

I had maet pie and mushy peas reinforced with oxtail gravy for dinner and a bowl of the oxtail stew for tea.

The curries were lovely but took ages to prepare.
Sirloin steak, aunt bessies onion rings (best ever), tomatoes & chips tonight - having a change from roast. Out to lunch tomorrow for our daughter's 50th.

I have taken a lump of Minced Beef out of the freezer. No thoughts on what to turn it into...I think about it every now and then, but inspiration has not found me.
(I go through these periods of getting thoroughly sick of cooking...as you know.)

I bought carrots and boiled them. I mashed them and converted the last bowl of oxtail into two meals. I had one for dinner and for tea had battered fish, chips and mushy peas, home-cooked of course!

Had a lovely lunch at Fence Gate yesterday.
Cottage pie with a twist tonight.
minced beef, onion & carrot fried to brown, add in tspn salt 1 tspn chilli powder, 1 tspn ground cumin, 1 tabspn flour cook for one minute. Season with black pepper, add 300 ml. water and simmer for 10 mins. Meanwhile put potatoes, sliced to half cm thick into water and simmer for 4-5 mins. until just cooked. Drain carefully. Transfer the mince to a dish, top with the sliced potatoes and brush with melted butter. Sprinkle to top with a chopped chilli & parsley and bake for 30 mins. until golden. I find it odd that a Lo-salt recipe has a teaspoon of Salt in it!
I don't use Salt at all when cooking. Haven't eaten Salt in years...so much food has it in already...and when you don't eat Salt...boy! Can you taste it! Foods like Cheese, Ham, Vegemite, Crisps etc are all too salty for our taste buds now.
About the only think I may put a light sprinkle of Salt on is a Tomato.
( I even find Mineral Water a bit too salty)

Made miniature Chilli Meatballs last night and threw them through Cold Salad. Very nice.

Tonight will be Pie, Mash, Broccoli, Cauliflower, Carrot, Baby Peas...and possibly a trickle of Gravy.

I had an enhanced pizza for dinner. Margaret and Mick visited and they had bought confections so my tea was an Eccles cake and a slice of something with a small fried egg on Borgen as a top up.

I had the last of the oxtail stew and carrots for dinner and battered cod, mushy peas and chips for tea. Egremont Russets for pudding dinner and tea, they are lasting so well this year. I can't remember them ever being as good!

On the basis of this site's recommendation, I got some 'Princess Russets' from our local Artisan apple shop. Not too impressed - I'll stick with Cox's. :smile:

I had Homity Pie at Cauldwells Mill for dinner, we went there while Janet had a rest. Never had it before but it's good. (LINK) Had a meat pie and a fried egg butty on toasted Borgen for tea when I got back.

I make that quite often. We don't eat much meat. I would jazz it up with Chilli, and possibly some sharp Parmesan baked on the top of the pastry.

I used to make Homity Pies back in the days when I enjoyed baking!
Last night was avocado & king prawn salad with lashings of mayonnaise, tonight Col is making a curry of some sort. We have just had creamy leek and cauliflower soup for lunch, using up some slightly less than fresh veggies and the remains of a pot of creme fraiche. Yummy!

I boiled and mashed some carrots. I had mashed carrots and a Cornish pasty for dinner. The Co-op had an offer on my favourite Pizzas, 3 for £2 so I filled my boots. I had one, enhanced with extra grated cheese for tea and a small bowl of Muesli because I fancied it. My weight is up a bit but I am not worrying about it. I am under a lot of stress and it won't do me any harm.
