I went veggie shopping. Boiled carrots in the cider stock from slow cooking the pork and steamed a small cauliflower (49p) on top. The stock was a bit salty but not unmanageable after I topped the carrots up with a kilo of frozen peas. I had the cauli for dinner and carrots and peas with three small pork sausages for tea.

I have a couple of small lamb shanks plus mixed veg. in the slow cooker to be served with mash.

I had carrots, peas and chopped pork for dinner but had a change at teatime and had sweet corn chips, fried tomatoes (which were getting near sell-by date) and a fried egg. I'll admit it was perhaps a mistake cooking both pieces of pork at the same time to save leccy and cider!

Yes, we have it regularly and love it.....with a curry you forget it's not real rice!
We grate it with a coarse grater then either microwave or steam it. It falls through the holes in the steamer so we use a sieve.

Just had some with a chilli, blitzed it up in the food processor and baked it in the oven with cumin seeds and some butter. As you say, you soon forget it's not real rice.

I shall give that cauliflower rice a crack, I love cauliflower anyway. You'll be glad to know that I had the last of the pork and carrot for dinner yesterday. I had a treat for tea and just picked on half a small roasted chicken. The russet apples are lasting wonderfully this year and I am filling up on them.
During the day I slow cooked a beef joint and some stewing steak that came in the Xmas wrap up. I cooked it on a bed of onions and cabbage, deboned it at teatime and took the gravy off and put it in the fridge. By 19:00 the fat had set so into the deep fat fryer and the gravy back in the cooker. At the same time I popped a bag of broth bits in and gave it another couple of hours cooking. This morning I'll freeze some and extend the rest with something..... It's fairly substantial stuff.

Salad with left over chicken from last night here. It has been so hot over the last few days that I've got to the point where I can't be bothered.
31 degrees inside today. One more day over 30 and then the next 7 are mid 20's. Not a drop of rain in sight. Maybe we need to save up for evaporative cooling or air con for next summer!!

Later..... Being a singleton I have to do my own catering so I'm having a session of cooking before going into the shed.
I've taken three small bowls of the beef and cabbage and put them in the freezer, it's quite concentrated! I am boiling carrots and will extend the stew with them. One confession to make to Wendy. Due to my enthusiasm for tinned new potatoes I still have some in the cupboard so I'm using them up, two tins have gone into the stew. I promise I will not buy any more!!

Try celeriac as an alternative Stanley. Next bit of advice.....stock up on nuts (not peanuts) and cheese for filling snacks rather than fruit, I know you love your apples but it would be wise to stick to just one a day, they are packed with sugar!

Savoy cabbage, frozen peas with smoked lardons and a drop of double cream, topped with some of Steve Hirst's pork sausages for tea last night, 5.5 mmol 60 minutes after I'll be having that again.

I must give celeriac a go but 'er indoors doesn't like celery so won't try it, I may have to pass it off as something else just get her to eat some

It only tastes vaguely like celery Kev. Try slicing it very thinly and pretending its lasagna, steam it for a few minutes first till its a bit soft then layer it with bolognese sauce.

I'm going to do a lasagna using leeks instead of pasta. Just enjoyed some creamy cauliflower (plus lots of other bits of veg) soup for lunch. There are some scones in the oven at the moment, made with almond flour and chopped nuts....I will report back on how those turn out!

I will be having meat and potato pie as well Moh. I had a portion of steak and potatoes in the freezer that I made the other week. A bit of pastry a few peas and some gravy and I'll be sorted.

I'll have a do at that, cheers Wendy. Does it mash OK? I need a substitute for a cheesy potato bake.

The scones sound interesting, I may try that mix on a steak cobbler...
