Ian, dead in line with Wendy's recommended foods!I had a bowl of the new beef and veggie stew for dinner and tea but enhanced with a new batch of cabbage and bacon I have made. I spent more on green veggies than on meat at the butcher's yesterday but admit that the beef for the stew came out of the freezer.....

Beef and veggie stew for dinner and as a change, Bacon, fried tomatoes and eggs for tea. Marvellous how half a bowl fills you up.....

Brisket slow cooking on a bed of onions and garlic, with mashed carrots and swede plus mashed horseradish potatoes.

That's what my beef stew is essentially Moh but with masses of green veg.
Had the stew X2 for dinner and tea and put two bowls in the fridge for today. In the Xmas wrap-up I had a pile of home-cured bacon, I fried half of it cut into lardons ready for the next batch of green veggies.

I had the last two bowls of beef stew for dinner and tea and at the same time started a new cooking using the Lardons I fried last night, two tins of chopped tomatoes and made up with Cauliflower, Spinach, Kale and sprouts. No shortage of greens here!

Two bowls of the bacon and veggie stew for dinner and tea. Only one small apple and nibbled on cashew nuts and pork crackling. I filled up with Apricot Wensleydale on hard small oatcake for afters.

Chicken Kiev (Steve Hirst on Newtown) with sprouts fried in bacon fat (rendered down some lardons) with a bit if chilli and garlic. That went down well :-)

Sounds good. We've just had poached salmon with steamed asparagus, broccoli and green beans. Lots of butter, a squeeze of lemon and some coleslaw made it delicious. Low carb chocolate pudding with blueberries and double cream to followork.

I had Bacon, eggs and beans for dinner. For tea I had the remainder of the baked beans, a tin of mushy peas and a fried black pudding. I have finished the pork crackle and nut snack and am going to have to find something different for a nibble, I'm eating to many nuts! Sticking to one apple a day......

Kathy gave me a bunch of double cream that was on its sell-by date. I had muesli with cream for dinner. During the day I marinaded a nice piece of rump steak and cooked it with two tomatoes so for tea I had the steak and tomatoes with mushy peas and two fried eggs. Lovely.... I've found that an efficient nibble is one square of 85% dark chocolate. Two very small Egremont russets.....

I had muesli and cream for dinner again, I still have 3/4 of a pint of Jersey cream to get through! Cheap nourishing grub and I don't think it harms the carbs too much as it is mainly oats and nuts. For tea I had three sausages, grilled and chopped up in a tin of baked beans with a small chicken drumstick for afters. Lots of greens to cook today Maz and Wendy!

Lots of carbs in the oats Stanley, so you need to watch how much you eat, if there is dried fruit in the muesli that will make it even higher in carbs.Check the nutritional information on the pack! You need to keep the baked bean consumption under control too.... :sad:

Butternut squash and cauliflower curry worked well as a side dish to the chicken curry made with spices and coconut milk.

Found this 'low carb flour' mix on t'internet, apparently it can be used as a direct replacement for wheat based flour without distinct taste differences.

Ingredients
3 cups almond flour (12 net carbs per cup–TOTAL 36)
1 cup coconut flour (24 net carbs per cup–TOTAL 24)
½ cup oat fiber OR ground golden flax (0 net carbs per cup–TOTAL 0)
½ cup vital wheat gluten (OR if you do not want gluten in your mix, use Xantham Gum; I love putting gluten in my low carb baked goods) (24 net carbs per cup–TOTAL 12)
Optional: ½ cup plain whey protein powder (OR may be omitted or just increase almond flour) (16 net carbs per cup–TOTAL 8)
Instructions
Note: Carb counts vary among products. For example, some gluten free flours have 110 carbs per cup, while Bob’s Red Mill Gluten Free Flour has eighty! Be sure to check carb counts on various products!
Makes approximately six total cups. Each cup has approximately 12 NET carbs in it.
Combine all ingredients thoroughly.
Store in an airtight container.

The woman who posted it is American so the specific products mentioned may be known by different names.

Has anyone tried this type of thing?

We have bought most of those items with baking in mind Kev, you'll find they are available online. We just stopped baking when the kitchen work was going on and havent got started again! Col found Carbalose flour good for pastry but it is very expensive.
The Xanthan gum is important because it binds the other ingredients together.
