Just had a baked potato with mature Scottish Cheddar, homemade beef chilli with homemade garlic bread. It went down very well after the afternoon walk.
I made my garlic bread in the toaster, handy if you only want a portion for one. The method works best with a decent seeded type bread, we have Chia bread all the time which is ideal. I made some garlic butter using a single crushed garlic clove (sorry Maz). You then butter both sides of the bread and shove it in the toaster. We have a Dualit toaster and it's the same concept as for the sandwich toaster slot, butter both sides, the toastie uses the cage to hold the two slices together with the contents but for this method you can just use the normal slots. I made two slices and toasted them for the normal two minutes, came out perfect, nice and crispy and with a good garlic tang. I have done it in the past to make a fried bread equivalent without using the normal method of fat or oil in the frying pan.

Home made spicy lamb burgers with a green salad, coleslaw and salsa. Our son is having a go at low carbing and he brought some cauliflower tacos to the feast.

Muesli and cream again for dinner. A bowl of Sausages, diced belly pork and greens for tea with drained apricots and Jersey cream for pudding. The greens are Savoy Cabbage, flat Kale, Spinach, sprouts and cauliflower.

Glad you approve Wendy. I find that if they are finely shredded in the Kenwood and then lightly steamed with vinegar, salt and pepper they are lovely. I had a bowl of the sausage, pork and tomato with greens for dinner. I put three bowls in the fridge for ready use ammunition and had the remaining half bowl for tea. I topped up with a bit of Muesli, a tin of drained peaches and the last of the Jersey Cream. One apple for a treat.....

Wendy and I were on the same track. I boiled sprouts and steamed cauliflower and broth bits on top. I defrosted three small smoked mackerel fillets, divided them between two bowls and topped both up with the veggies. One bowl for dinner and one for tea.... Lovely!

Sounds good. Not tried smoked fish with cauliflower cheese, could be a good reworking of a fish pie without the potatoes, I'll keep you posted. Tea at Nandos in Newcastle tonight, be interesting to see how that goes.

My mother's fish pie was superb Kev and she always put smoked haddock and hard boiled eggs in it.....
I had a bowl of muesli for dinner to avoid cooking getting in the way of the shed. I had a bowl of sprouts left in the fridge and so I marinaded a small piece of rump steak and two burgers all day, cooked them and chopped them up and had them with the sprouts for tea. Lovely!

I had a big cooking day yesterday and finished up with a good mutton and green vegetable stew. I had some for dinner and it was superb but I knew it could improve so for tea I left it alone and had Muesli and cheese on oatcakes for a filler. The slow cooker is on now and by dinnertime the mutton and green veggies will be even better!

One pot chicken and greens day today, chicken thighs, leeks, savoy cabbage and spring greens. Fried off some lardons to get a bit of fat in the pan, then onions, garlic, chilli, ginger, a sprinkling of Morrocan tagine spice mix and a good few twists of black pepper. In with the thighs, a can of tomatoes and top it up with water. The rest added after about half an hour, a good pinch of salt and a can of chick peas. It smells lovely sitting here watching the snow fall.

I made a pan of soup this morning from all the veggy bits that needed using up, leeks, celery, carrot, cauliflower and broccoli. Col did cheese on toast (one high protein roll from Lidl shared between us) to go with it. Very satisfying after dashing out into the blizzard to recover pony shaped snowmen from the bottom of the field.
Himself is now preparing a chicken curry to put in the slow cooker for tea.

It does, I have been very impressed. It's snowing down here but it's not sticking, I'd have loved to have helped you eat it

Family took us to the Pendle Inn, Barley yesterday for my birthday which was on Friday so I did not cook. Today is chicken in white wine & cream and mashed potatoes.

I had the mutton stew and impressive greens for dinner. After my afternoon sleep I filled three bowls and put them in the fridge and tipped a bag of frozen green beans in what remained with extra salt and pepper. By teatime it was ready and I had a bowl of that plus oatcakes and cheese for a filler. You are both right about this way of eating, I am enjoying it and yesterday threw out the Borgen loaf from the freezer.... I shall never eat bread again.
Two questions Wendy. Does the occasional bowl of nut and fruit, oat based muesli fit in and give me some carbs? Can I occasionally have some Basmati Rice?

It's up to you how much you want to control your carb intake Stanley. By cutting back on bread, potatoes and apples you will have made a big difference to your blood glucose levels, but rice (of any type) is shockingly high in carbs and a serving of 100gms is equivalent to eating at least 5 teaspoons of sugar, so my advice would be to avoid it. We use cauliflower rice instead, it tastes great with curry! Your muesli and oatcakes will be moderately high in carbs, but if you limit the amount you eat then that could be fine for you. Colin limits his carb intake to about 60gms a day, but I still have a small bowl of porridge for breakfast and a couple of oatcakes or Ryvitas with my lunch, so I may have about 100gms....but then I'm not diabetic.
