I had 'a healthy pizza' for dinner. This is a pizza filling on a base of chicken meat instead of pastry, very good and filling. Tea was a small pork pie with baked beans.

Steak pudding with mushy peas for dinner. I stewed plums as Kath had given me an out of date double Jersey cream. Tea was a fillet of fresh wild sea bass cooked in butter, sea salt and a drop of plum juice. Lovely! I had it with peas and scalloped chips. Stewed plums and cream for afters.

Can you tell me more about your healthy pizza, Stanley? Was the base minced chicken? I recently got a recipe for a pizza that had minced beef as the base...and I'm imagining it would form a solid base ( you cook it in a fry pan as a big flat pattie) - (I think) then add the toppings and pop it in the oven for the cheese etc to melt. I must say the picture of it looks quite appetising. Must try it. So I'm interested how a chicken base would work.
Did you enjoy it? Would you eat it again?
( see...I get odd responses if I ask Febby such questions so his opinion is not one to go by. This week he has declared he hates Jasmine Rice.... :laugh5: ...which is the only Rice I have used in nearly 30 years since I met him. He eats the lot and has never complained before! It depends which way the wind is blowing with his opinions about food.)
Anyway, after a big day in the garden, I am shoving Pasties in the oven tonight. Sunday night is our easy night.

It's something that Kath at Brown's butcher's sells occasionally. Essentially it's small cuts of chicken laid in the bottom of a foil container and then the usual pizza ingredients laid over the top, tomato paste, grated cheese and sliced sausage. I added halved baby plum tomatoes to the top and baked in a moderate oven for half an hour to make sure the chicken was thoroughly cooked. Very nice and yes I'd have it again. That pizza taste without the carbs. I'm sure Wendy would approve!
I'm sure it would work in the way you suggest in a frying pan. Very similar to a Spanish Omelette when you think about it and I have always liked them.

So it was a knife and fork job? You couldn't slice it like a pizza and eat it with your hands? (One handy thing about a dough base).
I decided to do a small Potato Bake to have with the Pasties and Veg. Then I changed tac while peeling the spuds and made a large Potato Bake with a good half a sachet of French Onion Soup tossed in with the cream/cheese/milk sauce. I have one of those food sealing machines now (great invention!) and I can freeze a portion for a meal in the van. So that is cooking long and low in the oven and the house smells beautiful...

I used a spoon Maz, the chicken was tender and could be cut with the spoon.

It struck me Maz that like a Spanish Omelette, it would be an ideal dish for using up leftovers. You could put just about anything in it!

Olives and mushrooms Stanley, Colin usually has some sliced spicy sausage on his but he didn't have any. It's the base that's "Fat Head" you can use whatever topping you fancy.

Ive got a lamb shoulder out of the freezer ready to roast. Its rare that we have a joint so I'm looking forward to that with fresh veggies from the garden.

Unfortunately, "his lordship" won't eat olives or mushrooms! He won't eat Italian Sausage either.

I have ground almonds on my shopping list..... (I hope that's what 'almond flour' is!)
I had steak pudding and sprouts for dinner and a small pork pie with sprouts and baked beans for tea. Yes, you are right, I am on a baked bean fest this week. A much underrated food!

I have the Chicken Pizza ready for the oven. My toppings are Roast Pumpkin, Roast Red Capsicum, Onion, Tomato and Cheese...on top of the Chicken and a Tomato Paste layer. Hope it cooks up nicely. I shall let you know.
Just realised I forgot the Tomatoes. Back to the kitchen Maz!

Stanley, almond flour is finer than ground almonds but that is the only difference.

The Chicken Pizza was absolutely delicious. We managed it with a knife and fork, but I can understand why you ate yours with a soon! We both agreed we would have it again. (I did take a pic...)

Marilyn - may I gently suggest that if you can attach a picture to an email to Stanley, then you could post directly with the 'attachment' feature, and we could see more of your pictures sooner.

The gallery baffles me, but I get by with attachments, and find it more intuitive. Try it. Nothing to lose. :smile:
