My lunch today was a product of what I had last week and is an example of batch cooking and thrift.

Last Wednesday I defrosted a chicken that we had in the freezer, bought and frozen when reduced at the Coop. I oven roasted it after lunch on Thursday. I saved the resultant stock let it cool and put it in the fridge. Thursday tea I had one breast along with home made oven chips and peas. Friday lunch I had the legs with Chia bread. Friday tea I had the other breast with half the rice Sally had for her tea along with vine tomatoes for me. Saturday, I stripped the carcass of all remaining meat, had a chicken and tomato sandwich for my lunch then bubbled the carcass up for an hour or so to create more stock. I skimmed the fat from the stock in the fridge and added it to the pan along with at tablespoon or so of dried Thyme, three carrots peeled and chopped, a chopped leek, a large onion, four potatoes, half a large red chilli, three cloves of garlic. Bubbled it all up until the veg was cooked then added all the recovered chicken. I put a vegetable stock cube and about a teaspoon of flaked chilli's and some veggie gravy granules to thicken.

Chicken stew with Chia for Saturday tea. Let the rest cool then shoved it through the liquidizer. This produced three tubs of Chicken Soup, one of which I have had for my lunch today.

I think the chicken was about £3.00 on offer, the veg probably no more than around £1.00 including the spuds from the milkman. So £4.00. Six meals so far with two still in the freezer. :smile:

Tonight's tea will be rosti potatoes with diced lamb from another batch cooking session.

Thrifty. You and Stanley would make harmonious flat mates.

Sausages here tonight ( thin beef, plain, no garlic), with onion gravy. ( not my favourite meal, but his lordship likes it). I won’t bother with the sausage - just mash and loads of veg with onion gravy. I freeze the sausages in packs of four, because he can eat four and there is no waste.
Might make BBQ Chicken and Fresh Mushroom Pizza tomorrow ( I like Pizza but his lordship doesn’t) :biggrin2:

I had a slice of braising steak cooked on a bed of onions and gravy, (did 3 in the slow cooker so so a coupe to freeze), chips and petite pois.

Meat wasn't delivered until evening so sausage, egg and tomatoes for breakfast and a very expensive pizza for tea (£3.40 Co-op Irresistible. I notice the same size Domino delivered to your door is £10 on a flyer that came through the letter box the other day!)
I shall be roasting wings today!

Overcooked sausage and mashed veggies for tea. Serves me right, I forgot they were under the grill! As my mother used to say, not burned just well done!
