I cooked the chicken, spicy wings and veggies yesterday. So breakfast was a Scotch Egg and tea was chicken and veggies.

I had some spare pork sausages so I cooked them along with an onion then chopped them up. I added a tin of baked beans, a tin of chopped tomatoes, half tin of butter beans, half tin of black beans, A handful of chopped runner beans and the same of chopped peppers, Tipped a few frozen peas in for good measure and half a chilli. Very tasty, a portion for tea with home made bread, I have some for lunch today and I put two portions in the freezer. :smile:

I'm having chicken Fajitas for tea.

I got a cauliflower and two heads of Broccoli and cooked them to extend the chicken and veggies which I had X two for breakfast and tea.

Temps have risen to 95F and over here so I dragged out the gas grill and made us Mick's Cajun Chicken Burgers with Bacon.

Mix together 1 tbs ground paprika, 1 tbs ground cumin and 1 tbs ground coriander.
Split 1 chicken breast lenghways to make 2 thinner pieces. Rub the breasts pieces in the herb mix until completely coated.
Cut bacon into handy sized pieces.

Grill for around 20 mins, adding a slice of Swiss cheese to the chicken breasts when almost cooked.
Serve on your favourite bread (in our case Tuscan) with a side salad and a glass of chilled Sauvignon Blanc.

It was awful, I only ate it to be polite :biggrin2:

Looks good to me. Not sure I'd have quite so much spice though. :smile:

This was my lastminute solution to tonight's evening meal problem.

The base is a cheat from Aldi ready made but unadorned, and the ham was from a home boiled joint, which has been a great success. :smile:

Both look good but unfortunately are verboten as far as I am concerned.
I wasn't deprived though, I enjoyed my chicken and veggies (extended with a cauliflower and two heads of Broccoli) X two for breakfast and tea. Had a snack of 40g of pork scratchings at noon on the Bookie Bench. :biggrin2:

I had the last of the chicken and veggies X two for breakfast and tea. I put some mutton in to slow cook overnight and that will feature today. Must cook veggies as well..... I did a partial veggie shop yesterday and will finish it in the Co-op this morning.

Yesterday was veggie cooking after a breakfast of a Scotch Egg. Tea was veggies and the mutton I cooked overnight. Firmly back in the low carb groove.

I just got the last punnet of strawberries on display from Aldi. Just threw them into the trolley without a look. Beggars can't be choosers.

I think they are the best tasting (and best looking) strawberries I've ever had.

They are described as Ruby Red - Variety 'Alia' and grown by Tim Chambers in Kent.

Wow - looks like knows a bit about fruit growing. . . .Tim Chambers :smile:

They do look good.

I have a kilo of topside in the pressure cooker for the next 50 minutes. It's been in the fridge for 4 hours with a Cajun spice rub on it and is in the pot with some strong coffee, a tin of tomatoes, celery, carrots, onions, red peppers, garlic, an oxo cube and some freshly ground black pepper. I'll fish it out once the pot has depressurized and shred it with a fork, blitz the sauce and veg with the blender and add some to the shredded meat. It'll be served with mini new potatoes roasted in olive oil and sea salt and some roasted peppers stuffed with cream cheese.
I was going to use brisket but couldn't find any.

I am treating myself to one of these for pudding, only 8g of carbs. A mini vienetta on a stick.

I had 3 of the mini potatoes, they were less than an inch in diameter. I didn't weigh them but there are 17g per 100g of carbohydrate in potatoes.

I would go crackers Kev and cook too many..... I shall restrict my carb rebellions to the occasional batch of sweet potato chips. (Very small batch!)
Yesterday I had veggies with the occasional stray bit of chicken in it for breakfast and tea.

Amalfi Style Prawns with Basmati Rice cooked in chicken stock with sweet pepper pieces and chopped onions.
Small salad topped with Feta cheese.

But rice is high carb! I can see I am going to have to stop everything else and read the books that Wendy brought me....
I had veggies X two for breakfast and tea and I have got a haggis defrosting. All right, the oatmeal content will make it high carb!

Wholemeal basmati rice is around 50g of carbs per 100g. A 30g portion will contain 15g of carbs. I eat rice, just not a lot of it, same with potatoes.

I understand Kev, I'm not attacking you for it, more admiring your restraint. If it was me I'd be exceeding the 30g portion you can stick to.....
