Forget the air fryer and slow cooker, I got a chance to cook today and fired up the Stanley stove. Roasted a huge lamb shoulder with roast tatties and steamed veggies.

I was fancying roast lamb Wendy but told myself not to be silly....
Steak pudding chips and peas would be nice as well David but the puds are verboten.....
So I stuck to chicken and veggies and felt no pain.....

Spooky, Shoulder of lamb was our main meal. Basted with mint, basil and rosemary. Very little fat on it which was a surprise. Went down a treat with enough for another meal+.

Roast chicken here, we had lamb with our visitors on Saturday, and I think our friend Wendy is doing lamb for lunch today

I have always thought shoulder of Lamb like Shoulder bacon, is sweeter meat and often carries less fat.
I stuck to me chicken and veggies......

I will be having Lamb Kleftico made in the air fryer. It's quicker than the oven. I need to make some bread though which will involve the oven but only for 40 minutes.

I have done it a few times in the air fryer Kev. I use pre cooked diced lamb that has been batch cooked via the slow cooker. Only takes an hour in the air fryer just to cook the spuds etc and bring the rest of the bits together. Comes out just about bob on.

I had the last of the chicken and veggies, exactly three helpings to empty the fridge. Cooked my veggies for the week and this morning I'll roast the 4 hour chicken.

Chicken and veggies for tea at Chez Kev today.
2lb of chicken thighs have been marinating in natural yoghurt, fresh chillies, garlic, ginger, garam masala, salt and pepper. I've roasted some cumin seeds in a pan and browned some onions, it's all gone in the pressure cooker and will 'hiss' away for around 25 minutes. In the meantime there's another pot full of veg gurgling away with some of the roasted cumin seeds, turmeric, fresh chillies, roughly chopped garlic a red pepper and some salt & pepper. I have chopped up some fresh coriander to finish it off and will be dining around 7pm with poppadoms, lime pickle, raita and some lager to wash it down. There'll be enough left to freeze for another day

Yesterday was the last of the chicken and veggies, all finished down to the last scrap! I didn't cook veggies, I remembered I had had the booster and perhaps that was why I ached a bit so I was kind to myself and watched snooker instead. So today is a cooking day starting at 6AM, the chicken and 2lbs of hot and spicy wings goes in to roast and later after it has had its 4 hours I shall start cooking veggies. It's going to be a busy day.

Literally -for tea I had a cup of
Soursop Tea It's a long story and you don't deserve further punishment - but it falls into the category of "don't knock it till you've tried it". Surprisingly I quite liked it. There's Raspberry and Passion Fruit still to be tried.
It had the additional benefit of being a free gift when bought with some normal Ceylon black tea.
