Three X chicken and veggies again!
Question..... I know I'm eccentric but does anyone else you know eat virtually nothing except food he or she has prepared from scratch using fresh ingredients?

Three hot meals as usual.
I cooked some swede to extend the veggies and it struck me that it's such an under rated vegetable, And very low on the carbohydrate scale as well which is good.

I saw a video on roasting onions that interested me. Not something I have ever done. I can feel an experiment coming on!

Roast onions and tomatoes together and you have heaven! Chuck some garlic in as well to enhance further. :extrawink:

Carvery lunch at Steeton Hall Hotel, much easier than cooking it myself :biggrin2:
Cheese and crackers for tea with a bottle of Aldi's Jammy Red (Argentinian Malbec) to wash it down.

Yesterday I had chicken and veggies for breakfast and tea but a tomato and cheese omelette for dinner. (I had eggs that were being neglected and needed to go!)

I had my usual chicken and veggies for breakfast and tea but for dinner roasted garlic, tomatoes and red onions with some strips of pork loin in a Maple Sauce underneath. Never done that combination before and it was superb. :biggrin2:

I'd heard of the Australian confectionery "Tim Tams" but never seen them until yesterday. I bought a packet in Home Bargains. They were dark chocolate and very much the same as Penguin biscuits. A pack of ten was I think £2.00. Quite nice.

I'm watching out for "Lamingtons" next - though I have no idea what to look for - just heard them mentioned on Neighbours a long time ago. :smile:

Lamington’s. Moist, light and morish. Sponge cake coated in chocolate sauce, then coconut.
Are they originally from Australia (Queensland) or New Zealand? The debate continues 🤔

Meat and veggies X two for breakfast and tea but only a light snack of a boiled onion with cheese on 6 very small oatcakes during the day.

Two small helpings of meat and veggies for breakfast and tea but for dinner I made a three egg cheese and onion omelette and it was the best ever. I must remember how I did it!
(I find I'm tending to eat more onions of late. I have an idea they might be good for me!)

David, I agree with you about Lamingtons, they don't attract me at all.....
I had meat and veggies for breakfast and tea but made a cheese and onion omelette for Dinner. Used red onions and I think they perhaps have more taste than white ones...... Or perhaps that's only true of the ones I bought at the Co-op.

Porridge for breakfast, it will probably be soup and home baked bread for lunch. Our weekly sourdough awakening from the fridge yesterday and I made a batch of pizza dough yesterday which has been fermenting in the fridge until required at tea time tonight. We have tomatoes and peppers and onions and we have some sliced Chorizo for mine along with some grated Mozzarella. Sally's will stop short at the veggie stage. :smile:

My appetite is slowly returning, I had two small pork loin chops, some mini potatoes and steamed veg for tea. I cleared the plate which is an improvement.

The sourdough Pizza base was judged to be the tastiest that I have made. An online find for a basic 1:2:3 mix. Made the day before and fermented in the fridge where you could batch mix as it keeps for up to a week. The 1:2:3 ratio is dead easy to scale up. 60g sourdough starter, 120ml warm water, 180g strong flour, 15ml virgin olive oil, which will make enough for two pizzas once mixed it goes in the fridge for up to week, ready for the first bake the next day.

May be an idea for our Carla in summer as she has a wood burning pizza oven which comes out to play when it's a nice weekend. :smile:

It took a long time but I finally learned that any sort of flour based food or baked goods has a bad effect on me. The nearest I allow myself to get is the oatcakes and they are tiny.....
Yesterday I had meat and veggies for breakfast and tea and cheese and tomato on oatcakes for dinner.
