Two hot meals and a snack for dinner. I seem to have settled into this routine quite naturally. Bit like me giving up smoking so easily. I always said that food is the most addictive substance we have to contend with but even it seems to be succumbing to advancing years!
Slowly but steadily I shrink and apart from the effect it is proven to have on Type 2 Diabetes, it must be good for my bad right knee!

Tonight's tea will be what I cooked up yesterday. We had a couple of packs of diced gammon pieces. I chucked the contents of one pack into the air fryer with a sliced onion, the gammon pieces were done once the onions were cooked. Shoved then in a pan and added a tin of chopped tomatoes and a tin of canellini bean. Very tasty as you cant go wrong with a base of tomatoes and onion! I will have a portion with the flat bread I mentioned in the baking thread.

Can't argue against your opinion of tomato and onion Ian. Add vinegar and some sort of magic kicks in!
Yesterday I had my meat and veggies for breakfast and tea but a light snack of cheese and tomato on oatcake for dinner. I am getting last week's batch into a corner now and so this morning I'll be putting my chicken in for its four hour roast. I shopped for veggies yesterday......

We get Aldi's chopped tomatoes with herbs which are always a good starter or addition to any stews or other dishes. I have always liked tomatoes but got fully turned on to the mix quite a while ago when we were holidaying on one of the Greek islands.
We had to exit our hotel room at 11am but could leave our bags in the foyer for when our transfer coach came, our flight was an overnight job so the pickup wasn't until 9pm. Plenty of time to return the Yamaha motorbike I had hired and then while the last day hours away in the local village and in one of the restaurants with an odd beer. We settled on an outside terrace under climbing vines for a bit of shade and ordered a tomato and onion salad for two to share. It was presented with sliced giant vine tomatoes interleaved with a mixture of brown and red sliced onions and drizzled with olive oil. A basket of fresh home baked bread with more infused oils for dipping accompanied. We spent the evening with that and a couple of beers overlooking the village and the bay below. About as simple as you can get but absolute magic in a dish.
Lunch today was home made chicken soup and a couple of slices of my sour dough loaf toasted and buttered. Not decided on tea yet.

I'm getting last week's veggies into a corner. Only five servings left so I had two for breakfast and tea and once again Tomatoes and cheese on oatcake for dinner. I cooked my chicken and did some last minute chopping for greens at the Co-op. Today I shall be cooking veggies.....

I was veggie cooking yesterday so I had the last of the last batch of veggies for breakfast and dinner then tea was a helping of the new cooking.

We will be having Fajitas for tea tonight, Chicken for me and veggie for Sally. I have got all the extra bits, garlic, tomatoes, peppers, onions and of course Fajita spice. I spent half an hour to make some Tortilla's to wrap them. Easy enough so why not? I have dug out our Wok's ready for the makings. Note to self, use a slightly bigger pan next time. I reckon they will be edible.

I saw John's latest cooking video David. I tried something different myself. I was cooking my pork belly in the slow cooker. I cut it up as usual and put it in the slow cooker with the usual suspects but then added two oranges cut into bite size chunks. After de-fatting it I tried it. Brilliant, I shall be doing it again.
Apart from that, three helpings of chicken and veggies.... (Sprouts are finished for this year but I made my greens up with extra cabbage.)

The Tortilla's were very good, a bit more tasty than the commercially produced ones you get from the supermarket. Don't know why that surprised me as all home cooked stuff is generally better than the run of the mill variants. Sally commented, " you know you have just inherited another job" so I think they passed muster.
My latest sourdough bake will come into play today.

I had the final helping of the last batch for breakfast and then veggie cooking. I made myself fish and chips with mushy peas for dinner when I had finished the veggies and then chicken and new batch veggies for tea.

I had chicken and veggies for breakfast and tea but after the lecture at the library Susan and I went to the chip shop in Town Square and I had fish chips and mushy peas.....
