WHAT DID WE HAVE FOR TEA?

First defrost five birds. In this case a grouse, pheasant, teal, mallard, and a goose. Then bone out the birds. The teal and grouse breast meat is placed inside the pheasant, then the stuffed pheasant is placed into the mallard, then the four birds are placed onto the goose. The whole lot is then bound with string like a rolled beef joint. Before roasting I lay fatty bacon along the top, wild geese are very lean and will be dry without the bacon fat. the trimmings will make a delicious gravy. There are only two of us to eat this large meal, so lots left for sandwiches, and the solids from the gravy are appreciated by the dogs as a treat. Hope this helps Marilyn.

I'll stick to me butties! Had the rest of the haslett on a big butty for dinner with some sliced tomato popped in as well. During the day I boiled some 'baby potatoes' whole in their skins and popped them in the two shear stew. By teatime they had taken up some of the flavours in the stew and it was a good tea! Couldn't resist a slice of toast with Co-op Thick Cut marmalade on it. For those of you who like old fashioned dark and bitter marmalade, have a crack at the Co-op brand. They changed the name about a year ago but it's still good stuff. Stands up well alongside the expensive 'vintage' brands.

As Moh says you can buy three bird roasts at many places now. Christmas 2012 Mary bought one as a treat for me, I scraped mine from the plate to the dogs dishes. and Mary whipped up some instant curry sauce for hers and pushed it down. Probably I have 38 years experience of making these roasts, once even aspiring to a 7 bird roast the effort it takes is well worth it when one sits down to dine, and it is only a once a year treat, same as my game pie.

Hartley, I actually thought you were kidding at first, when I read the explanation at the top of the page...then the penny dropped that you were serious ( think it was the "defrost five birds" bit. I thought " yeah...right...ho ho ho!)
That is amazing. ( wonder who first thought to do that!)
Such a lot of trouble to go to. And I imagine quite costly?

Finished the stew with baby spuds for dinner and had half a haggis and mashed swede for tea. Nowt wrong with offal from sheep!

Chilli slow cooking, will serve with baled potatoes & garlic bread.

Dinner was a haggis and fried egg butty and it was so filling that all I wanted for tea was a slice of toast with toasted cheese on it. Fruit for pudding of course!

That is interesting Moh, The one thing i have never done is roast a fish, but many times I have had three different fish in the frying pan on the banks of Loch Long. As fresh as they come and a hearty breakfast.

Chicken dish not sure what yet. I was going to do James Martin's buttered chicken until I realised it had to marinate over night!!

Oxtail soup with a french stick, followed by bananas and custard. Don't know where the urge for oxtail came from?

I made some tomato relish with a couple of spare toms, two onions, a small tin of concentrated tomato paste and the usual vinegar, olive oil, sugar and salt and pepper. That made a base for a kipper butty for dinner and under scrambled eggs on toast for tea. Butcher's day today so I didn't want to start a new two shear stew. Tomatoes, olive oil and vinegar do wonderful things to each other when cooked slowly......

Going to the chippy tonight, Fish chips and mushy peas on the menu.

Kath gave me a sliced wholemeal loaf that was on its sell-by date yesterday so I have been on small butties. Pressed beef with tomato relish for dinner, three small ones. Same again at teatime but I fancied jam on bread, supposed to be bad for me but I love jam butties!

I remembered to marinate the chicken, so it is butter chicken with rice & naans,

Traditional English fare tonight. Individual steak pies with suet pastry crusts, cauliflower florets, crispy chips, sumptuous gravy and good French red wine. The left over gravy will go well with the turkey joint, pigs in waistcoats, crisp roasted, and new potatoes, chopped carrots and swede, and Brussels sprouts tomorrow. We rarely have a sweet or pudding as there is no room left.

Just done the washing up after dining on sirloin steak, baked potato, onion rings and mushrooms, for afters icecream.

Small haslet butties for dinner and I finished Kath's loaf off with two small butties for pudding, one apricot conserve and one marmalade so I wasn't hungry at teatime, just a banana and a couple of apples. During the evening I braised an piece of well-hung rump slowly on the stove on a bed of onions and garlic.

A Ham and Cheese Croissant each.
( no "afters" for us because both need to lose a few pounds)

I have to admit that was one of the reasons for my frugal tea....



The braised steak, onions and garlic cooked slowly last night and popped into the fridge to mature and develop. This will go well on my butties today!

Had the steak on a butty for dinner and popped two burgers in with the gravy and onions. Had one on a small butty for tea, one left over for today.
