One of the problems about cooking for yourself when you live alone is quantities.... Such is the pease pudding problem. Even though I froze three bowls I still had too much! Hence the concentration on pease pudding over the last couple of days! Yesterday I had two pease pudding butties for dinner and two for tea! I have it in a corner now, only one helping left in the pan. It's a good job I like it! Mind you, I cracked last night and got the munchies so I had two more oven bottoms with St Augur cheese on, naughty but nice.... I feel so guilty!

Steak pudding, last of the pease pudding in the pan and deep fried carrots for dinner. Pie and peas for tea with a St Augur butty for afters.

last night I tried frying some strips of cod coated in dessicated coconut rather than breadcrumbs. It was quite tasty served with steamed broccoli, green beans, spinach and a few celeriac chips.

I made a low carb curry dinner today and suffered a bit of a low this afternoon, fortunately I had some chocolate in the cupboard which sorted me out pretty quickly. Glucose levels were up to 5.1mmol after the chocolate, that's the first time I've had a hypo since following a low carb diet plan. May need to tweak the medication if it happens again.

Sounds good Kev. Are you getting support from your doctor? I don't mean good that your sugar level went too low! Just good that you can think about reducing your meds.

If I've ever had a hypo I haven't noticed it. I suspect my brush with Type 2 is a lot more benign than most. Good luck with it Kev.
I had meat pie and the second bowl of frozen pease pudding for dinner. Tea was not up to my usual standard. I had been given a pot of very expensive sweet and sour cook in sauce and did some sausage and cauliflower in it. I didn't like it at all and after eating half of it threw the other half away. Not a patch on my home made cook in sauce, thin and insubstantial.... I suspect there was a lot of MSG in it...

I saw the diabetic nurse back in December and my hba1c was high, I made a decision to do something about it and reduced my carbohydrate intake. As yet neither my GP or the nurse are aware of the changes, I'm due a call back to the clinic in 4 months so I may wait until then unless I have another hypo of courseWendyf wrote:Sounds good Kev. Stanley, you won't have a hypo taking Metformin. It is sulfonylureas, the other class of drugs given to stimulate the production of insulin, (or insulin injections) that can cause hypos in type 2 diabetics.
Col saw an NHS dietician last week who was very supportive of his low carb regime, she is arranging for him to see a specialist who is campaigning for a change in the NHS guidelines for diabetics.

You'd know, trust me. With regard to type 2 Ithink you either have it or you don't, there is a condition they call "pre diabetes" which can be reversed with careful diet but once on medication it's ongoing. Col was taking 4 Gliclizide and 3 Metformin a day and still getting increasingly high readings, but since limiting his carbohydrate intake to under 75gms a day he is managing well on just 2 Gliclizide, one morning and one tea time. His fasting level in a morning is still slightly higher than he would like (it goes up overnight) but there are no peaks after meals so he is hoping to see a considerable improvement in his HbA1c level next time.

I'll have a read of that, thanks Wendy. I've been using the diabetes UK 10 week plan, not completely just as a prompt and it seems to be working. Kev, they tell me I am classed as pre-diabetic now that I have lost weight. I've taken my own decision and cut the Metformin back to 3 a day and am watching the weight. So far, so good! It sounds as though I am lucky!
One and a half very small haslet and coleslaw butties for dinner. I built a mutton stew but it wasn't quite ready at teatime so I had two small oven bottoms with bacon and fried egg. The mutton will kick in today.....

I went to Newmarket today - first time for ages. Pleased to see that Tennants Butchers are still going.
That's what a real butcher's should look like. I got some Suffolk black bacon, dry cured with a black finish (treacle cure?). Some chuck steak, and some lamb neck chops. Those because MOH had them the other day, and it reminded me that I used to have them regularly a long time ago.
That's tea sorted for a week or so.

Shallow fried, Crumbed Whiting tonight with loads of Salad, and a hard boiled egg.
I got creative today and made a Potato/Cauliflower/Sweetcorn Salad...with a dressing made from a combination of Mayo, Salad Cream, Freshly squeezed Lemon, Parsley, Chives, Black Pepper and finely chopped Brown Onion. I must say it is rather delicious. Will go nicely with the fish and Garden Salad.

The Mutton came to with added carrots, peas, the last of the Pease pudding and sweet potato. Had a bowl for dinner and froze three bowls. Felt like a change for tea so I had two oven bottoms with beetroot on them.

Same here David! I was reared on Scrag, neck end, skirt , oxtail, pork belly and mutton breast. Moh is right about flavour. Shin beef is far tastier than fillet steak!
I had the last of the mutton stew in the pan for dinner and washed it out. By the way, the meat in that was leg hock, neck end and a couple of mutton steaks. The hock was particularly good after long slow cooking.... I had to go to the Pioneer for milk and so treated myself to a C-op best pizza for tea. They are expensive, £4, but really good ingredients. I enjoy one occasion ally but with added grated cheddar cheese!

Pilchard mashed with salad cream on two small butties for dinner. Boiled swede, steamed green cabbage and a bowl of the mutton stew out of the freezer for tea.
