Very plain Beef Sausages ( I questioned the Butcher closely as to Garlic), with Onion Gravy, Boiled Spuds, Cauliflower, Broccoli, Carrot and Baby Peas. Very nice...

Had chicken & chorizo paella last night - roast fillet of lamb, new potatoes, leeks & mashed swede tonight.

I've been off my grub..... Good in that I am back to target weight of 12 stone. Am cooking again and watching my intake! Boiled veggies with interesting sauces......

Had a small sausage butty on Burgen plus a boiled egg for dinner. Mashed veggies and a steak pudding for tea.....

I steamed the cauliflower and made some proper roux white sauce. Cauli and white sauce for dinner and tea....

Yummy. I could have joined you and enjoyed that, Stanley.
I made a Mashed Potato Topped Tuna/Cauliflower/Sweet Corn Mornay...served with Baby Peas, Carrots and Broccoli.
( not everyone's favourite, but we love it)

Our Winter is almost over. It will be back to Salad soon enough. I am trying to fit all our Winter favourites in before then. Must make another batch of Butternut Pumpkin Soup.)

It was good Maz. Yesterday I had Stilton cheese and apple on rough oatcakes for dinner. For tea I had some mashed carrots and parsnip with two small hot smoked Mackerel fillets and a fried egg.

Yesterday turned out to be a mackerel day! Kath dropped a jar of smoked mackerel pate yesterday and broke the seal on it. She couldn't sell it of course so she gave it to me. That had to be eaten so dinner was two brown teacakes with pate and tomatoes. I had a mackerel fillet left from yesterday so tea was mashed veggies, peas, the fillet and a fried egg.

Home made scotch pie, chips and peas. More of a winter meal really but tasty.
Measure with a micrometer, mark with a pencil, cut with an axe.

Veggies and steak pudding for dinner, same for tea with a meat pie. Slow cooked bacon ribs in tomato sauce all day.

I had some spuds that wanted cooking so I made chips and had Meat pie, chips and some of the gravy from the bacon ribs for dinner. I put three bowls of the bacon rib stew in the fridge and had two small peanut butter and tomato butties for tea followed later by some muesli just because I fancied it!

You are starting to sound like the old (pre storm) Stanley.
Always a sign that things are going in the right direction when the interest in food returns.

Slow cooking a Curry tonight, to have with Naan Bread, and Jasmine Rice.
Not that the weather is cold, but it suited me to slow cook today as I have been gardening. I've also cleared a half a shelf in the pantry for staples I don't want to leave in the van. (Coffee/tea/sugar/cornflour/tomato paste etc etc). They are easy to grab and pack if we decide at the last minute to have a weekend away...and because they are all together in one dedicated spot, it won't take too much thinking about. I don't like leaving stuff in the van with our climate.)

Just waiting for my garden shears to recharge, then I'm back out in the garden. The local ducks will be investigating anywhere I have pulled a weed out later...they love fresh ground.

You're right Maz and my weight is going up! Not worried because I feel fine and it's only a couple of pounds. Yesterday I had a bowl of the bacon rib stew for dinner and tea.

I do exactly the same Maz. I got sick of buying the same staples every time we went away and having multiples when we got home. On one trip I found myself collecting little packets of sugar when we had a coffee so I could make scones while we were away!! Good job you don't need much sugar for scones. :laugh5:

I divided the last bowl of rib stew into two bowls and added a tin of potatoes. Had it for dinner and tea, augmented tea with six coarse oatcakes with Boursin cheese and apple slices.
I was reminded by a TV programme on food canning how cheap and nutritious many tinned staples are. At 29p for a large tin, potatoes are cheaper in the can than bought 'fresh' and just as good with no waste.

I've never seen Potatoes in a tin.
Are they peeled and cooked? And what are they packed in...salt water?
(What country are they from?)

I am experimenting with some Puff Pastry tonight...making some sort of parcels filled with Spinach/Ricotta Cheese/Crispy Bacon/Hard Boiled Eggs. Wish me luck!

English potatoes Maz, peeled and partly cooked. Very good spuds and no waste. Nutritionally they are in no way inferior to ordinary spuds and a lot cheaper at 29p for a large tin.

They are very handy for whipping up a quick potato salad whilst camping Maz. You will find them in the aisle with the tinned tomatoes.

I've just checked and the tin in my pantry is from NZ.

Salmon fillets fried in lots of butter with added lemon juice & capers to make a bit of sauce plus home grown green beans, purple sprouting broccoli and a few peas.

Wendy...that sounds absolutely yummy!

Our Flaky Pastry things were nice, ( possibly a bit of a lucky dip as I didn't have much Bacon) but I wouldn't rush to make them again. They only came about because I was making the freezer a bit more tidy this morning and came across the Flaky Pastry...and thought it was time I used it. A similar meal tomorrow as I came across some frozen unfilled Pita Pockets. So I shall make meatballs tomorrow and pop them in to the Pita with tomato/cheesy sauce.
Clears some space in the freezer, and better than throwing things away.
( I am sure Hubby chooses these obscure purchases...) :geek:

No further cooking required. Simply give them a good rinse, drain, and add whatever you fancy. They are very handy if you get somewhere a bit late. You can whip it up while Dave's cooking the BBQ!!
