Thrifty Chicken & Pasta

Post by PanBiker »

Or how to make one chicken breast into four meals. :extrawink:

Slice and dice a nice brown onion, dice the chicken breast and fry together in a little oil to slightly brown the onions and seal the chicken. Add a tin of chunky diced tomatoes, 1 x vegetable stock cube, 1 x chicken stock cube, garlic salt or fresh if you like and a few chilli flakes to taste. Simmer while you cook 120g or so of Fusilli pasta. Drain when cooked to your preference then add to the chicken dish and stir to coat the pasta. The diced chicken will be cooked by the time the pasta is cooked. Serve as is or add a bit of cheese of choice as a topping. You can also shove it into the oven as a pasta bake if you wish. This recipe will make four portions so some for the freezer if you like.

20 minutes including prep.

That sounds tasty. I've cooked similar but with the addition of chorizo :good:
